The chef's knife is probably a cook's most important tool. And given the amount of time it spends in your hand, it's definitely worth making sure you have a good one. Good knife skills help improve the quality of the food you cook by ensuring uniform cooking times and making it look nicer. Did you know that keeping your chef's knife sharp will make your job in the kitchen easier and safer, too. When you're using a dull knife you have to apply more pressure than you would with a sharper blade, making the knife more likely to slip.This video series provides some fundamental information about these key basic techniques.

Choosing the correct cooking method not only impacts the final product, but also affects the texture, appearance and flavor of the dish.​ Cooking methods can be broken down into 2 categories: dry heat and moist heat.

Dry heat cooking refers to any cooking technique where the heat is transferred to the food item without using any moisture. Dry-heat cooking typically involves high heat, with temperatures of 300°F or hotter.

Moist heat cooking methods include any techniques that involve cooking with moisture — whether it's steam, water, stock, wine or some other liquid. 

Whether you're preparing a feast far in advance or whipping up a quick dinner, once you've mastered these basic cooking methods, it will be easy to pair ingredients with their appropriate cooking techniques.

The “Mother Sauces” are the five most basic sauces that any legitimate sauce is derived from. The sauces, cover all forms of classical emulsion and stock sauces. There are infinite possibilities recorded as variations under Mother’s umbrella. To know how to make a good sauce is to know how to cook. 

Simply put, a sauce is flavored liquid plus thickening agent. By varying the combination of liquid, flavoring and thickening agent, the possibilities are endless.
